Old-fashioned rolled oats are whole oat groats that have been steamed soft and pressed flat between rollers. That steam-and-roll is the only processing — nothing is added, nothing stripped — which is why they taste of oat and not of cardboard.
Thicker than quick oats and far more forgiving, they cook in about ten minutes on the stove and survive a long bake without dissolving. The flake you want for granola, flapjacks, crumble toppings and a proper bowl of porridge.

Stovetop 8–10 minutes, 1 part oats to 2 parts liquid. Or soak overnight, no cooking.

Overnight oats: Stir equal parts oats and milk (or water) in a jar, add a spoon of yogurt and a pinch of salt, refrigerate overnight. Eat cold or warmed.
House granola: Toss 4 cups oats with 1/2 cup maple syrup and 1/3 cup oil, spread thin, bake at 300°F for 35–40 minutes, stirring once. Add seeds and dried fruit after it cools.
