Manitoba is sunflower country, and these hulled kernels are about as local as a seed gets here. Raw and unsalted, they are a blank slate — toast them for depth, leave them raw for soft texture, salt them or don't.

Sunflower kernels carry oil, which means flavour but also a shorter shelf life than a dry grain. Keep them cool and they will reward you; let them sit warm and they will eventually taste flat.

They go into seeded bread, granola, trail mix, pesto in place of pine nuts, and a sprinkle over just about any salad or soup.

Storage

Refrigerate or freeze for best life — the oils go rancid faster at room temperature. Smell before use if stored warm.

Seeds high in oil — sunflower, flax, hemp, pumpkin — keep best cold. Decant what you will use this month into a jar in the pantry and store the rest of the bag in the freezer. They thaw instantly and you will never catch a rancid note.

Toasting: spread on a dry pan over medium heat, shaking, 4–6 minutes until golden and fragrant. They darken fast at the end, so do not wander off.
