Aluminum is the right metal for a sheet pan: it heats fast and evenly and it is light enough to handle full. The trade for that performance is that thin, cheap aluminum warps — which is why Nordic Ware rolls a steel wire into the rim and uses a heavier gauge than the dollar-store pans.
Natural (uncoated) aluminum browns better than any nonstick sheet and never flakes. It will dull and develop a patina with use; that is the surface getting better, not worse. Line it with parchment and nothing sticks.
The Big Sheet is larger than a standard half sheet — the right size for a full batch of cookies, a sheet-pan dinner for the family, or a slab of focaccia. We stock the half and quarter sizes too.

Hand wash with warm water and a soft brush; skip the dishwasher, where detergents and heat will pit and discolour the aluminum. A little discolouration on top is normal and harmless — it is the pan earning its keep.
For sticky jobs, line with parchment or a silicone mat. If food does catch, a paste of baking soda and water lifts it without scratching. Dry promptly to avoid water spots.
